Slow Cooker White Chicken Chili

This easy slow cooker chili recipe is a family favorite that you can set and forget until dinner. Enjoy this healthy recipe which creates about 6 servings.

Ingredients:

  • Three (3) 16oz cans of great northern beans
  • Two (2) tablespoons of olive oil
  • One (1) white onion, chopped
  • Two (2) tablespoons of minced garlic
  • Four (4) cups of chicken stock
  • One (1+) pound of chicken breast
  • One (1) cup of salsa verde
  • Two (2) teaspoons of ground cumin
  • One (1) teaspoon of dried oregano
  • One (1) teaspoon of coriander
  • One-half (1/2) teaspoon of white pepper
  • One to Two (1-2) pickled jalapeno peppers, chopped
  • One (1) 16oz can of corn
  • Two (2) limes

Directions:

Coat the bottom of the Slow Cooker with the olive oil.  First place the chicken breasts and all ingredients expect the can of corn and limes.  Add additional salt to your preference.  Cook on low for 8 hours.  One half hour before serving, remove and shred the chicken breasts, next stir in corn and juice from two (2) limes.  Serve with additional lime wedges and/or sliced avocado.
